Broccoli and Bacon Salad



I'm always looking for new salads to make and this is my newest one.

Ingredients Needed

  • 6 slices of bacon cooked crispy and broken into bite sized pieces 
  • 2 heads of broccoli cut into small florets 
  • 1/2 of a large red onion chopped (sweet onions would work great too)
  • 4 large radishes sliced
  • 1/2 cup of Hellman's mayonnaise 
  • 1/3rd cup of sugar
  • 3 tablespoons of red wine vinegar


Directions

  1. To a large bowl add the broccoli, red onion, radishes, sunflower seeds, and bacon and toss.
  2. In a small bowl combine the mayonnaise, sugar, and red wine vinegar. Whisk until mixed really well.
  3. Add the dressing to the salad and toss.
  4. Cover and refrigerate until ready to serve. 
  5. Serve and ENJOY!

Bacon Roasted Pork Loin

Pork loin wrapped in bacon 

My son and I were talking the other day about ways to make pork loin and he suggested wrapping it in bacon. Because this is such a lean cut of pork sometimes it will come out quite dry if not cooked properly. Wrapping this cut in bacon not only added flavor but juiciness as well. 

Ingredients 
  • 2 Pork Loins (mine came to a total of 3 pounds)
  • 1 package of bacon
  • 3 Tbs of honey
  • 3 Tbs of Balsamic Vinegar 
  • 1 small cooking onion diced
  • Dried Rosemary or Fresh to taste
  • 4-5 Tbs of Sunmaid Raisins
Instructions
  1. Preheat your oven to 375 degrees F.
  2. Wrap the bacon around the pork tenderloin and secure with wooden toothpicks.
  3. In a pan on medium high heat brown the meat for about 8 minutes turning frequently.
  4. In a small bowl combine honey, vinegar, diced onion and Rosemary. Mix well.
  5. Place the pork tenderloins in a roasting pan and cover with the honey mixture.
  6. Place into the oven for 20 minutes. 
  7. Remove and add the raisins to the top of the pork. 
  8. Place back into the oven for approximately another 15 - 20 min. 
  9. Remove and let the pork sit for about 5 min before slicing.
  10. Serve and ENJOY!

Bacon Fried Green Beans

Surprise all the bacon lovers in your house and serve them this vegetable side dish. Bacon fried green beans easy to make and you'll only need three ingredients. For those picky vegetable eaters this is the perfect dish as long as they like bacon. There are not too many people I've met that don't like bacon though so I'm sure this will be a hit.


Ingredients 

  • Fresh green beans washed and ends removed
  • One onion peeled. sliced or cut into chunks
  • 1/4 pound of bacon or more cut into small pieces 

Instructions for making Bacon Fried Green Bean
  1. Heat and bring water to a boil in a medium pot or saucepan
  2. Add the green beans and cook for about three minutes
  3. Remove, drain, and run the beans under cold water to stop them from cooking any longer
  4. In a large frying pan or wok cook the bacon then drain.
  5. Add the bacon back into the pan or wok along with the onions and cook until the onions are soft
  6. Add the green beans, toss, and stir fry until the beans are cooked to the way you like them.
  7. Serve and ENJOY!
