Not being a big fan of meatloaf I'm always trying new ways to prepare it in hopes that I will enjoy it someday. My family on the other hand like any kind of meatloaf as long as it's homemade.<br />

This meatloaf was topped with cream of mushroom soup. Next time I may follow this exact recipe using cream of celery soup and maybe change up the meat and use ground turkey or ground chicken.<br />

<li>1 pound of ground beef</li>
<li>1/2 cup of chopped onions</li>

<li>1/8th tsp. of onion salt (optional)</li>
<li>1/4 tsp. of garlic powder</li>
<li>1 TBS of Worcheshire sauce</li>
<li>1 large egg</li>

<li>Preheat your oven to 350 degrees F.</li>
<li>Spray a loaf pan with cooking oil if you're not using a non-stick pan. </li>
<li>In a bowl mix together ground beef, onions, Ketchup, onion salt, garlic powder, Worcheshire sauce, raw egg, and breadcrumbs.</li>
<li>Press everything into your loaf pan and place in your oven for 30 minutes. </li>
<li>After 30 minutes, remove the pan from oven and carefully drain. Spoon the soup right from the can on top of the meatloaf and place back in the oven for another 30 minutes. </li>
<li>Remove from oven, serve, and ENJOY!</li>

Trying to think of something to go with my homemade chicken wings I decided to go with a pasta salad. Normally I throw together pasta, tuna, mayo, and some spices but today I wanted something a little different and here's what I came up with.<br />

<li>Cook your pasta according to box directions, drain and run under cold water.</li>
<li>In a large bowl add cooked pasta, onion, celery, and broccoli. Gently toss.</li>
<li>In a 2 cup measuring cup or a bowl mix together the mayonnaise, wine vinegar, sugar, relish, Dijon mustard, salt, and pepper. Whisk until well blended.</li>
<li>Pour dressing over pasta and gently mix in.</li>
<li>Refrigerate until ready to serve.</li>
<li>ENJOY!</li>

This is one of the easiest meals I've prepared lately. The chicken came out moist, tender, and delicious. The best part is that you only need one ingredient for the chicken.<br />

I'm always trying new things when it comes to cooking and happened to have a bottle of VH Chicken and Ginger stir-fry sauce in my refrigerator. I thought to myself that this might be good and went ahead and made it. Was I ever glad that I did. I served the chicken over a bed of rice and made a Greek salad.<br />

<b>Ingredients</b><br />
<br />
<ul>
<li>4 chicken breasts</li>
<li>1/4 - 1/2 a bottle of VH Orange and Ginger Stir-Fry sauce</li>
</ul>

<b>Instructions</b><br />
<br />
<ul>
<li>Preheat your oven to 350 degrees F.</li>
<li>Spray an oven safe dish with cooking spray.</li>
<li>Place the chicken breasts in the dish and pour the VH sauce over the breasts.</li>
<li>Cook for 1 hour.</li>
<li>Remove from the oven and serve over a bed of rice. </li>

I love homemade macaroni and cheese but hubby doesn't really care for it. Today I decided I'd try something different to tempt him.<br />
<br />
What you'll need for this delicious comfort food.<br />
<br />
<b>Ingredients</b><br />
<ul>
<li>1 pound of lean ground beef cooked and drained</li>
<li>400 grams of Tortiglioni pasta (uncooked) or pasta of your choice</li>
<li>1 can of whole tomatoes</li>
<li>3 - 4 cups of shredded old cheddar cheese or cheese of your choice</li>
<li>garlic powder</li>
</ul>

<b>Instructions</b><br />
<ol>
<li>Preheat oven to 350 degrees F. </li>
<li>Start by boiling your pasta.</li>
<li>Fry the beef and sprinkle generously with garlic powder. Drain and set aside.</li>
<li>Once the pasta is cooked drain and rinse under cold water.</li>
<li>In the bottom of a casserole dish add the pasta.</li>
<li>Mix in the ground beef.</li>
<li>Next cut the tomatoes in half and gently mix into the macaroni mixture. </li>
<li>Pour half of the tomato juice over the top.</li>
<li>Gently mix in about half of the cheese.</li>
<li>Top with the rest of the cheese. </li>
<li>Cover and set in the oven for about 45 minutes. </li>
<li>Remove covering and cook for an additional 15 minutes.</li>
<li>Serve with salt and pepper and ENJOY!</li>

<li>2 medium onions chopped</li>
<li>3-4 garlic cloves sliced very thin</li>
<li>1 can of crushed tomatoes</li>
<li>1 can of tomato sauce</li>
<li>1 1/2 Tbs. of Italian seasoning</li>
<li>fresh ground pepper to taste</li>
<li>salt to taste</li>
<li>1 container of Ricotta cheese</li>
<li>3/4 of a cup of Parmesan cheese grated</li>
<li>2 eggs</li>
<li>1 pound of Mozzarella cheese</li>

<li>Early in the day I make my lasagna sauce starting by frying and draining the lean ground beef.</li>
<li>Next saute the chopped onions and sliced garlic cloves in a tablespoon of canola oil.</li>
<li>In a large saucepan add the ground beef, onions, garlic, crushed tomatoes, tomato sauce, Italian seasoning and fresh ground pepper.</li>
<li>Bring all of the above to a boil then turn your heat down and simmer for about half an hour. </li>
<li>Preheat your oven to 375 degrees.</li>
<li>Grate the Mozzarella cheese and set aside.</li>
<li>In a medium size bowl combine the Ricotta cheese, Parmesan cheese, salt to taste, and 2 eggs. Mix well. </li>
<li>Spray your lasagna pan with cooking oil.</li>
<li>In the bottom of the pan add 1 1/2 cups of sauce spreading it evenly.</li>
<li>Lay 3 - 4 lasagna noodles on top of the sauce.</li>
<li>Spread 1/3 of the Ricotta cheese over the noodles.</li>
<li>Next add more sauce followed by 1/3rd of the Mozzarella cheese.</li>
<li>Continue to layer the noodles, sauce cheese mixture, and Mozzarella cheese 2 more times.</li>
<li>Place in the oven for 35 - 45 minutes.</li>
<li>Remove from the oven and let your lasagna sit for about 5 minutes.</li>
<li>Slice, serve, and ENJOY!</li>

<li>2 packages of Knorr Sidekicks Honey Garlic Noodles prepared according to pkg. directions</li>
<li>1 - 2 pounds of medium sized raw shrimp peeled \</li>
<li>2 Tbsp. of soy sauce</li>
<li>2 Tbsp. of canola or vegetable oil</li>
<li>2 large eggs slightly beaten</li>
<li>1 - 2 Tbsp. of lime juice</li>
</ul>

<li>Once your shrimp is peeled, place in a bowl and toss with soy sauce</li>
<li>Heat the oil in a large frying pan on medium high heat</li>
<li>Add the shrimp to the frying pan and cook approximately 3 minutes or until shrimp is pink</li>
<li>Add the honey garlic noodles to the pan and stir</li>
<li>Next pour your beaten eggs over the entire mixture</li>
<li>Turn your heat down to low</li>
<li>Cover the frying pan with a lid until the eggs are firm</li>
<li>Add the lime juice and stir</li>
<li>Serve and ENJOY!</li>

Instructions</h2>

<li style="margin: 0px 0px 0.5em;">Scrub potatoes and cut into ½” strips. Place the strips into a large bowl with your ice water, cover, and chill for about an hour.</li>
<li style="margin: 0px 0px 0.5em;">Preheat oven to 475 F Remove the strips and dry well with paper towels.</li>
<li style="margin: 0px 0px 0.5em;">Put all the spices into a plastic bag and shake to mix. Put potato strips into a bowl and coat with oil. Add the potatoes to the plastic bag with the spices and shake to make sure that the strips are well coated.</li>
<li style="margin: 0px 0px 0.5em;">Place on a non-stick shallow pan and cover with foil and cook for 15 minutes.</li>
<li style="margin: 0px 0px 0.5em;">Remove foil and turn strips over, then continue to bake for another 15 – 20 minutes.</li>

<li>Add the grated garlic stirring again.</li>
<li>Next comes the cream. Be sure to stir.</li>

While following <a class="g-profile" href="https://plus.google.com/102331992370948120564" target="_blank">+Eugene Monaco</a>'s Alfredo sauce recipe in one non stick pot, I heated olive oil and a tbs. of butter in a frying pan for the sliced mushrooms and shrimp. To start with I sauted the mushrooms until done. Removing the mushrooms and putting them on a plate, I added the shrimp to the frying pan and cooked until pink. Please note this only takes a few minutes.<br />
<br />
While the sauce, mushrooms, and shrimp were cooking I boiled fresh fettuccine pasta in my pasta pot.<br />
<br />
Once everything was ready I mixed the alfredo sauce with the pasta, added mushrooms, and plated it, topping it off with the shrimp.<br />
<br />
Voila a new family favorite recipe.<br />

Everyone has their own way of making potato salad whether it has mayo or sour cream or both. Some people prefer Hellmann's and some prefer Miracle Whip. We're a Hellman's type of family. </div>

I've had a few people ask me for my recipe lately and to be quite honest with you I just make the salad without thinking much about it. For decades now I pretty much make it the same way or close to it depending what I have on hand. </div>

<li>7 - 8 potatoes washed, boiled and cut into bite sized pieces</li>
<li>5 -6 hard boiled eggs peeled and chopped (Save 1-2 for garnish)</li>
<li>1/2 of a green pepper chopped</li>
<li>4 -5 green onions chopped</li>
<li>2 - 3 radishes chopped</li>
<li>garlic powder</li>
<li>celery seed salt</li>
<li>paprika </li>
<li>ground pepper</li>
<li>1 TBS of yellow mustard</li>
<li>1 TBS of green sweet relish</li>
<li>Hellmann's or Miracle Whip if you prefer</li>
</ul>

I don't measure out the spices so just make to your taste but don't be stingy.</div>

Instructions </div>

<li>I boil my potatoes till they are fork tender. Be careful not to overcook.</li>
<li>While the potatoes are cooking I prepare the green pepper, onion, and radishes.</li>
<li>Once the potatoes are cooked and have cooled off enough to handle I cut them into bite sized pieces. Most times I will leave the peel off but that's just me. If you must, remove the skin. do so before chopping.</li>
<li>In a large bowl add the chopped potatoes along with the green pepper, onion, and radishes and toss.</li>
<li>Next add your spices tossing again.</li>
<li>Next comes the chopped eggs, yellow mustard, relish and Hellmann's. I add the Hellmann's without measuring. Add what you feel you'd like. </li>
<li>Give everything a really good gentle toss, add more paprika to the top along with a sliced hard boiled egg or two. </li>
<li>Serve and ENJOY!</li>

I'm always looking for new salads to make and this is my newest one.<br />

<b>Ingredients Needed</b><br />

<li>6 slices of bacon cooked crispy and broken into bite sized pieces </li>
<li>2 heads of broccoli cut into small florets </li>
<li>1/2 of a large red onion chopped (sweet onions would work great too)</li>
<li>4 large radishes sliced</li>
<li>1/2 cup of Hellman's mayonnaise </li>
<li>1/3rd cup of sugar</li>
<li>3 tablespoons of red wine vinegar</li>
</ul>

<b>Directions</b><br />

<ol>
<li>To a large bowl add the broccoli, red onion, radishes, sunflower seeds, and bacon and toss.</li>
<li>In a small bowl combine the mayonnaise, sugar, and red wine vinegar. Whisk until mixed really well.</li>
<li>Add the dressing to the salad and toss.</li>
<li>Cover and refrigerate until ready to serve. </li>
<li>Serve and ENJOY!</li>

<li style="margin: 0px 0px 0.5em;">Grease a bundt pan.</li>
<li style="margin: 0px 0px 0.5em;">In a large mixing bowl combine the flour, baking powder, baking soda and salt mixing really well. Set aside.</li>
<li style="margin: 0px 0px 0.5em;">In a medium size mixing bowl beat together the butter and sugar.</li>
<li style="margin: 0px 0px 0.5em;">Beat in the eggs one at a time.</li>
<li style="margin: 0px 0px 0.5em;">Mix in the coffee and vanilla.</li>
<li style="margin: 0px 0px 0.5em;">Add this mixture to the flour mixture alternating with the sour cream.</li>
<li style="margin: 0px 0px 0.5em;">In a small mixing bowl mix together all the ingredients listed for raisin mixture.</li>
<li style="margin: 0px 0px 0.5em;">To the bottom of the bundt pan add about two cups of the batter. Sprinkle 1/4 cup of the raisin mixture on top of the batter.</li>
<li style="margin: 0px 0px 0.5em;">Keep doing this until almost all the batter is gone.</li>
<li style="margin: 0px 0px 0.5em;">For the top layer you want to end up with batter.</li>
<li style="margin: 0px 0px 0.5em;">Place in the oven for 50 minutes or until cake can be inserted with a toothpick coming out clean.</li>
<li style="margin: 0px 0px 0.5em;">Cool on a rack for 30 minutes.</li>
<li style="margin: 0px 0px 0.5em;">Place a plate on top of the cake and flip over allowing the cake to come out of the bundt pan and onto the plate.</li>

We're big garlic fans in my family and it seems like we can never get enough of it. If you want to you can cut back on the amount of cloves you use in this dish.<br />

<li>4 - 6 Chicken breasts (bone in)</li>
<li>3/4 cups of chicken broth (I used 1 Knorr chicken flavored bouillon cube mixed with boiling water)</li>
<li>1/2 cup of balsamic vinegar </li>
<li>5 large garlic cloves pressed</li>
<li>1 tsp. of Italian seasoning</li>
<li>1/2 tsp. of dried thyme</li>
<li>1/2 tsp. of dried rosemary</li>
<li>1 tsp. of dried chives</li>
<li>1/4 cup of brown sugar</li>
</ul>

<b>Making your marinade.</b></div>

<li>In a medium size bowl press the garlic cloves into the chicken broth and balsamic vinegar (cool first if you make the broth the way I did) </li>
<li>Next add the Italian seasoning, thyme, rosemary and chives.</li>
<li>Whisk in the brown sugar.</li>
<li>Place the chicken breasts in a ziplock bag or in a marinating dish.</li>
<li>Pour the marinade over the chicken and refrigerate for at least an hour and a half.</li>

<li style="margin: 0px 0px 0.5em; padding: 0px;">Preheat your oven to 350 degrees Fahrenheit.</li>
<li style="margin: 0px 0px 0.5em; padding: 0px;">In a medium size pot or Dutch oven melt 2 tablespoons of butter.</li>
<li style="margin: 0px 0px 0.5em; padding: 0px;">Add sliced mushrooms along with the diced medium onion and <span class="edit_filter_inactive edit_filter_unreviewed" data-id="39311">sauté</span> until the onions are soft along with the parsley.</li>
<li style="margin: 0px 0px 0.5em; padding: 0px;">Add 3 cups of chicken, vegetable broth, or water. I used chicken broth.</li>
<li style="margin: 0px 0px 0.5em; padding: 0px;">Let this all simmer for 20 minutes.</li>
<li style="margin: 0px 0px 0.5em; padding: 0px;">In a medium size microwave and oven safe bowl melt 2 tablespoons of butter.</li>
<li style="margin: 0px 0px 0.5em; padding: 0px;">Once melted whisk in 2 tablespoons of flour and then slowly add 1 cup of table cream or milk.</li>
<li style="margin: 0px 0px 0.5em; padding: 0px;">Add the small diced onion along with the 1/2 of a bay leaf.</li>
<li style="margin: 0px 0px 0.5em; padding: 0px;">Place into the preheated oven for 20 minutes.</li>
<li style="margin: 0px 0px 0.5em; padding: 0px;">Over a bowl drain the broth in the pot from the vegetables. Pour the broth back into the pot.</li>
<li style="margin: 0px 0px 0.5em; padding: 0px;">In a food processor or blender add the vegetables (mushrooms and onions) and chop and blend.</li>
<li style="margin: 0px 0px 0.5em; padding: 0px;">Set aside. Carefully remove the bowl out of the oven and pour while whisking into the broth on the stove.</li>
<li style="margin: 0px 0px 0.5em; padding: 0px;">Do not boil. Set the temperature dial at medium heat.</li>
<li style="margin: 0px 0px 0.5em; padding: 0px;">Carefully add the vegetables to the pot and stir.</li>
<li style="margin: 0px 0px 0.5em; padding: 0px;">Heat until desired temperature is reached.</li>
<li style="margin: 0px 0px 0.5em; padding: 0px;">Add paprika, salt, pepper, and top with chives or fresh parsley.</li>

<br />My son and I were talking the other day about ways to make pork loin and he suggested wrapping it in bacon. Because this is such a lean cut of pork sometimes it will come out quite dry if not cooked properly. Wrapping this cut in bacon not only added flavor but juiciness as well. <div>

<li>2 Pork Loins (mine came to a total of 3 pounds)</li>
<li>1 package of bacon</li>
<li>3 Tbs of honey</li>
<li>3 Tbs of Balsamic Vinegar </li>

<li>Dried Rosemary or Fresh to taste</li>
<li>4-5 Tbs of Sunmaid Raisins</li>

<li>Wrap the bacon around the pork tenderloin and secure with wooden toothpicks.</li>
<li>In a pan on medium high heat brown the meat for about 8 minutes turning frequently.</li>
<li>In a small bowl combine honey, vinegar, diced onion and Rosemary. Mix well.</li>
<li>Place the pork tenderloins in a roasting pan and cover with the honey mixture.</li>
<li>Place into the oven for 20 minutes. </li>
<li>Remove and add the raisins to the top of the pork. </li>
<li>Place back into the oven for approximately another 15 - 20 min. </li>
<li>Remove and let the pork sit for about 5 min before slicing.</li>
<li>Serve and ENJOY!</li>
